Step 1: Activate the Yeast

Step 2: Mix Dry Ingredients

  1. In a large bowl, whisk flour, baking powder, baking soda, and salt.

Step 3: Cut in the Fat

  1. Add cold butter or shortening.
  2. Cut it in with a pastry cutter or fingers until the mixture looks like coarse crumbs.

Step 4: Make the Dough

  1. Add activated yeast and buttermilk to the dry mixture.
  2. Stir gently until a soft dough forms.
  3. Do not overmix.

Step 5: Roll & Cut

  1. Turn dough onto a lightly floured surface.
  2. Roll out to about 2 cm / ¾ inch thick.
  3. Cut with a biscuit cutter or glass.

Step 6: Bake

  1. Preheat oven to 220°C (425°F).
  2. Place biscuits close together on a baking sheet.
  3. Bake 12–15 minutes, until golden on top.

Step 7: Finish

  • Brush hot biscuits with melted butter.
  • Serve warm.
