Step 1: Activate the Yeast
- In a small bowl, mix warm water and sugar.
- Sprinkle yeast on top.
- Let sit 5–10 minutes until foamy.
Step 2: Mix Dry Ingredients
- In a large bowl, whisk flour, baking powder, baking soda, and salt.
Step 3: Cut in the Fat
- Add cold butter or shortening.
- Cut it in with a pastry cutter or fingers until the mixture looks like coarse crumbs.
Step 4: Make the Dough
- Add activated yeast and buttermilk to the dry mixture.
- Stir gently until a soft dough forms.
- Do not overmix.
Step 5: Roll & Cut
- Turn dough onto a lightly floured surface.
- Roll out to about 2 cm / ¾ inch thick.
- Cut with a biscuit cutter or glass.
Step 6: Bake
- Preheat oven to 220°C (425°F).
- Place biscuits close together on a baking sheet.
- Bake 12–15 minutes, until golden on top.
Step 7: Finish
- Brush hot biscuits with melted butter.
- Serve warm.
