Healthy Vegetable Soup

Step 1: Sauté the Base

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook 3–4 minutes until soft.
  • Add garlic and cook 30 seconds until fragrant.

Step 2: Add Firm Vegetables

  • Add carrots, celery, and potato.

  • Remove bay leaf.
