Step 1: Sauté the Base
- Heat olive oil in a large pot over medium heat.

- Add carrots, celery, and potato.

Step 5: Add Soft Vegetables
- Add zucchini and broccoli/cauliflower.
- Simmer 5 more minutes.
Step 6: Finish & Serve
- Remove bay leaf.
- Taste and adjust seasoning.
- Sprinkle with fresh herbs before serving.
